What’s Sweet On The Grill At Your House For St. Patrick’s Day?

St. Patrick’s Day weekend is upon us.  There are many ways to celebrate, but grilling may become your new favorite.  Have you ever cooked a cheesecake on the grill?  Have you ever had a Guinness Cheesecake?  Maybe it’s time for two firsts! Sweet and salty, full of beer, this dessert has it all.

 

Below is a recipe that sounds perfect for St. Patty’s Day. Guinness Cheesecake with Pretzel Crust

Serves 8

Prep Time:  20 minutes

Cook Time:  55 minutes

INGREDIENTS

Pretzel Crust

1package (200g) pretzels

1 tbsp brown sugar

¼ cup melted butter

Cheesecake

1 – 8 oz. package of chocolate flavored cream cheese

1 – 8 oz. package of cream cheese

1 cup plain Greek Yogurt

1 cup sugar

2 tbsp all-purpose flour

1 tsp vanilla extract

1 egg at room temperature

1 cup Guinness

1 cup roughly chopped dark and/or milk chocolate

 

DIRECTIONS

Preheat the grill to 350 degrees and prepare for indirect grilling. To prevent your cheesecake from cracking, place a pan of water on the grill too.

Crush pretzels with a food processor or by hand to a powder.  In a bowl mix powdered pretzels with brown sugar and butter.  Mix ingredients until wet and clumpy.

Grease an 8” spring form pan. Press crust mixture on bottom and as far up the walls as possible.  Bake 10 minutes.

While the crust bakes, combine the sugar, flour, vanilla and cream cheeses using a hand mixer until nice and creamy.  Add the egg, Greek yogurt, and Guinness, mixing until smooth.

Pour the batter into the baked crust and top with the chocolate chunks.

Bake the cheesecake over indirect heat for 45 – 60 minutes.

The cheesecake is done when the edges are set and golden, and the center has a jello-ish consistency.  Remove from the grill and cool for a while before chilling.

Serve with whipped cream and some Guinness for the perfect Irish dessert experience.
